2 cups chopped, cooked chicken meat
1/4 cup dried cranberries, finely chopped
1 stalk celery, finely chopped
1 teaspoon lemon juice
1/4 cup mayonnaise
1-1/2 tbsps fresh tarragon
Salt and pepper to taste
Mix all of the ingredients together. Adjust seasoning. Serve with lettuce for a simple salad, or as a chicken salad sandwich.
