| 1 tbsp. Olive oil | 4 C. Chicken broth |
| 1/2 c. turkey, chopped small | 1 med. Carrot, chopped |
| 1 lg. Celery stalk, chopped | 1 med. Potato, chopped |
| 1 sm. Onion diced | 1 pkg. Frozen egg noodles. |
| 2 tsp. chopped parsley | salt and pepper to taste. |
| Heat oil in a large Dutch oven. Add garlic, celery, carrots, potato and onion. Saute until onion is soft. Add broth and bring to boil. Add noodles and cook 25 minutes or until noodles are done. Vegetables should be soft. Add the turkey, parsley, salt and pepper (to taste). Cook additional 5 - 10 minutes or until mixture is thoroughly heated.
