| 2 lbs. Chicken thighs | Minced zest and juice of 1 lime |
| 1 tbsp. vegetable oil | 1 tbsp. soy sauce |
| 2 tbsp. minced garlic | 1/4 tsp. cayenne |
| 2 tbsp. peanut butter | Salt and pepper to taste (heavy on pepper) |
| 2 tbsp. of minced cilantro leaves | |
| Remove meat from bones of the thighs (or purchase boneless). Cut the meat into 1 1/2-inch cubes. Mix with all other ingredients and marinate in large bowl overnight. Remove meat from marinade. Boil marinade for one minute. Thread meat onto wooden skewers and grill about 4 inches above moderately hot bed of coals. Baste with sauce every 2 to 3 minutes until meat is brown all over and cooked through. Serve. |
