| 7 oz. pkg. Dried peaches or apples | 3 tbsp. Sugar, or to taste | |
| 1 1/4 c. flour | 3/4 tsp. salt | |
| 1/2 c. shortening | 5 tbsp. Cold water |
| FOR FILLING:
Chop fruits and place in heavy saucepan. Cover with cold water. Cook over low heat for about45 minutes until fruit is very tender. Remove from heat and mash with fork until smooth. Add sugar, stirring in 1 tbsp. at a time until desired sweetness is obtained.
FOR CRUST: Combine flour and salt in mixing bowl. Add shortening and cut in with pastry cutter. Mix until mixture resembles coarse crumbs. Stir in water, mixing lightly with fork until mixture is just moist. Shape into ball on lightly floured surface. Cut dough into 8 portions, shaping each into 2 inch diameter balls. Roll balls into circle about 1/4 inch thick. Place heaping tbsp. Of fruit in center and fold over, crimping edge with fork. Fry pies in oil for about 4 minutes. |
