SHREDDED PORK SANDWICH

4 - 5 lb Boneless pork roast 3 tbsp brown sugar
2 tbsp creole seasoning 1 tbsp cumin
1 tbsp paprika 1 tbsp cayenne
salt and pepper to taste
Combine all ingredients in bowl. Place roast in baking dish and rub all over with mixture. Wrap in plastic wrap and refrigerate overnight. Prepare coals in smoker, bring to 225°F. Remove pork from refrigerator and bring to room temperature. Place roast in smoker. Baste about every 45 min. with favorite bbq sauce. Smoke until internal temperature of roast is 160°F. Remove from smoker and let rest 1/2 hour. With 2 forks, pull meat apart into small chunks. Toss with favorite BBQ sauce. Serve with cole slaw, pickles, chips and hamburger buns.
