PORK KEBOBS
1 lb. Pork loin cut 2 tbsp. Olive oil
2 cloves garlic, minced 2 tbsp. Lemon juice
1-tsp. fresh ground ginger 1 1/2 tsp. cumin
1 tsp. coriander 1/4 tsp. turmeric
1 tsp. paprika 1/4 tsp. cayenne
1/4 tsp. saffron threads Salt and pepper to taste
Combine olive oil, lemon juice, garlic, cumin, coriander, turmeric, paprika, cayenne, and saffron. Salt and pepper.
Cut loin into 1-inch cubes and marinate in mixture overnight.
Thread 3 or 4 cubes on skewer and grill over medium coals. Turn pork as it browns. Remove when done (between 5 and 10 minutes, depending on preference).
Cubes may also be sautéed in cast-iron skillet in lieu of grilling. (Place on skewers before serving for affect).
