| 1 lb. Pork loin cut | 2 tbsp. Olive oil |
| 2 cloves garlic, minced | 2 tbsp. Lemon juice |
| 1-tsp. fresh ground ginger | 1 1/2 tsp. cumin |
| 1 tsp. coriander | 1/4 tsp. turmeric |
| 1 tsp. paprika | 1/4 tsp. cayenne |
| 1/4 tsp. saffron threads | Salt and pepper to taste |
| Combine olive oil, lemon juice, garlic, cumin, coriander, turmeric, paprika, cayenne, and saffron. Salt and pepper. Cut loin into 1-inch cubes and marinate in mixture overnight. Thread 3 or 4 cubes on skewer and grill over medium coals. Turn pork as it browns. Remove when done (between 5 and 10 minutes, depending on preference). Cubes may also be sautéed in cast-iron skillet in lieu of grilling. (Place on skewers before serving for affect). 2000©Recipes4U™ |
