| 2 lb. ground beef | 1 lg. onion, chopped |
| 1 green bell pepper, chopped | 1 red bell pepper, chopped |
| 2 stalks celery, chopped | 1 can whole tomatoes, chopped |
| 2 cloves minced garlic | 2 tbsp chili powder |
| 1 med. jalapeno, seeds removed | 2 tsp dried oregano leaves |
| Salt and black pepper to taste | Chili salsa to taste |
| 1 tbsp tomato paste | Tomato sauce as required for consistency |
| Saute onions, green and red peppers and celery in large saucepan with 2 tnsp oil until soft. Add meat and cook on medium heat until brown. Stir in tomatoes and paste. Add garlic, oregano, chili powder, jalapeno, and slasa. Simmer 2 1/2 houes, stirring occasionally. Add salt and pepper to taste. Simmer additional 10 minutes, stirring occasionally. |
