PAN GRILLED SALMON

2, 6-9 oz. salmon fillets
salt and pepper
lemon wedges
Parsley garnish
Preheat large cast iron skillet. Preheat broiler with rack 4 inches below flame or heating coils. Place fillets in skillet, skin side down, and salt and pepper. Set heat at skillet to medium and cook for about 6 minutes or until flesh begins to become opaque. Move fillet, in skillet, to broiler and cook 2 to 3 minures or until top browns. The flesh should be moist, and fillet slightly undercooked in middle. Remove to serving plate, add garnish and lemon.
