| 4 tbsp. Extra virgin olive oil | 1 med. Onion, minced |
| 1/4 C. minced beef | 4 C. assorted vegetables. |
| Potatoes, carrots, peas, | beans, corn, celery, etc. |
| 5 C. chicken broth | 12 sprigs fresh parsley |
| 1 C. whole canned tomatoes, chopped | Grated Parmesan Cheese |
| Salt and pepper to taste. | |
| Pour 3 tbsp. oil into large sauce pan on medium heat. Add onion. Cook until onion is soft. Add beef. Cook for 3 minutes. Add remaining vegetables and seasoning. Cook for 1 minute. Add stock, parsley and tomatoes. Reduce heat to medium-low. Cook until vegetables are soft. (25-35 min.) Sprinkle with rest of olive oil and serve with cheese. (c)2000 Recipes4U.com |
