HOLLANDAISE SAUCE

8 tbs. butter 3 egg yolks
1/2 tsp salt pinch cayenne
1 tbs lemon juice
Melt butter in small sauce pan. Do not let brown. Combine egg yolks, salt, cayenne and lemon juice in blender. Drizzle in butter while machine runs. Taste and add juice or seasonings as required. Transfer to small bowl and keep warm by nesting bowl in bowl of very hot water. Stir occasionally, for up to 30 minutes.
