GRILLED SALMON

2 lb. salmon fillets 1 tbsp butter
2 med. shallots, finely chopped 1/4 C lemon juice
1 tbsp+1tsp brown sugar 1/8 tsp cayenne
1 tbsp grated ginger 1/4 C red wine vinegar
2 tbsp soy sauce 2 tbsp finely chopped cilantro
Start coals in grill. Prepare the sauce. Melt butter in sauce pan. Saute shallots until soft. Add remaining ingredients, except fillets, and bring to boil. Remove from heat as soon as boil begins. Divide equally to two bowls. When coals are hot (grayed) put salmon on grill skin side down abot 4 inches above coals. Grill 5 minutes, basting with sauce once. Turn skin side up and grill an additional 5 minutes , basting twice. Fillets are done when they begin to flake when picked with fork. Serve with reserved sauce.
