GRILLED PORTERHOUSE STEAK

FOR THE RUB
1 C brown sugar 2 tbsp chili powder
1/3 C paprika 1/4 C seasoned salt
2 tbsp black pepper 3 cloves minced garlic
2 tbsp minced onion 1/2 tsp dried ground thyme
1/2 tsp cayenne 1/2 tsp allspice
2 tsp salt
Thoroughly mix all ingredients together in bowl. Store in glass jar with tight lid until ready to use. Will keep indefinitely.
THE STEAK
Rub steak all over with the previously prepared rub. Let steak set for 15 minutes at room temperature, or marinate up to 24 hours refrigerated in closed container. Prepare hot fire in grill. When coals are grayed place steak on grill, about 4 inches above coals. Cook each side about 6 minutes. Temperature in center of meat should be 160 ° F. for medium done.
