| 2 (1 inch thick) Halibut Steaks | Juice of 1 lime |
| 2 tbsp. soy sauce | Lemon wedges |
| Soak steaks in lime juice and soy sauce for 15 to 30 minutes.
Grill fish over hot coals or 400°F electric or gas grill. Brush once or twice with the soy sauce/lime juce mixture. Turn after 4 minutes. Check fish for doneness after three minutes. Fish should be nicely browned. Serve with lemon wedges.
Check fish for doneness using a thin bladed knife. Insert between layers of flesh. When knife meets little resistance and flesh maintains just a touch of translucence, the fish is done.
