GRILLED HALIBUT STEAKS

2 (1 inch thick) Halibut Steaks Juice of 1 lime
2 tbsp. soy sauce Lemon wedges
Soak steaks in lime juice and soy sauce for 15 to 30 minutes. Grill fish over hot coals or 400°F electric or gas grill. Brush once or twice with the soy sauce/lime juce mixture. Turn after 4 minutes. Check fish for doneness after three minutes. Fish should be nicely browned. Serve with lemon wedges.
Check fish for doneness using a thin bladed knife. Insert between layers of flesh. When knife meets little resistance and flesh maintains just a touch of translucence, the fish is done.
Grilled fish is excellent with Bernaise Sauce, Mustard sauce and variety of other sauces.
