For each diner, poach two eggs. To start, toast split English muffin, two halves
per diner, and pan-fry bacon. Place bacon on muffin. To poach the eggs, place inch
of water in deep skillet. Bring to boil. add salt and vinegar. Lower heat to barely
bubbling. One at a time break eggs in shallow bowl and slip into water. Cover skillet,
or spoon water over top of eggs. Cook for 3 to 5 minutes or just until white is set
and yolk has filmed over. Remove to english muffin half with slotted spoon. Top with
Hollandais sauce.
