| 4 - 16 oz. pork loin chops |
| vegetable oil |
| salt and pepper to taste |
THE BASTING SAUCE
| 2 tbsp vegetable oil | 1 lrg. onion, diced |
| 2 tbsp ginger, minced | 1 C run |
| 1/2 C red wine vinegar | 1/4 C brown sugar |
| 4 cloves garlic, minced | salt and pepper to taste |
| 1/2 C molasses | 1 c ketchup |

Build a hot fire in grill. While coals heat up, prepare sauce by heating oil in small
saucepan. When oil is hot, add onions, sauting until soft. Add ginger and garlic, cook
for additional minute. Add remaining ingredients, bring to boil, then reduce to simmer
for 20 minutes. Set aside to cool. When coals are hot (grayed) place chops on grill directly over heat and sear each side 3 04 4 minutes. Move away from clals, cover grill and regulate heat to 250 °F. Cook each chop ubtil thermometer reads 160° F. in center. Chop should be slightly pink at center. During last minute, baste with sauce. |
