| 4 hard boiled eggs | 2 tbsp. Mayonnaise |
| 1 tsp. Dijon mustard | 1/4 tsp. cayenne or to taste |
| Salt to taste | Paprika for garnish |
| Cool and peel eggs. Cut in half lengthwise. Remove yolk. Mash Yolks with salt, mustard, mayonnaise and cayenne. Adjust to taste. Spoon the filling back into the egg halves.
If making a lot and wish to be fancy use a pastry bag to fill the halves. There are a million variations on Deviled Eggs. Try Substituting 1 tbsp. olive oil for the mayonnaise. Include 2 or 3 minced anchovies in the yolk paste. Substitute olive oil for the mayonnaise. Add 1/4 tsp. minced garlic, 2 tsp. Minced parsley 1 tbsp. Chopped capers and 1 tsp.
