DENVER OMELET

3 lg. eggs 1/4 tsp salt
1/8 tsp ground pepper pinch cayenne
4 tsps butter or olive oil 1/4 C chopped ham
1/4 C grated chedder 2 tbsp chopped onion
1 tbsp green bell pepper, chopped 1 tbsp red bell pepper, chopped
1 tbsp chopped green chilies 1 tbsp sour cream
Over med. heat melt butter, or heat oil, in 8" non-stick fry pan. Add eggs. Stir lightly until just set on bottom. spread onions, cheese, both peppers, chilies. ham and sour cream across omelet. Shake to loosen around edges. When eggs are set, but still soft, Fold one-third of omelet toward center. You can do this by raising pan and giving a flick of the wrist. Turn out on plate, folding omelet into thirds Serve with cheese and chopped onion for diner to sprinkle on omelet as he/she desires. Serves two.
