Over med. heat melt butter, or heat oil, in 8" non-stick fry pan. Add eggs. Stir
lightly until just set on bottom. spread onions, cheese, both peppers, chilies. ham
and sour cream across omelet. Shake to loosen around edges. When eggs are set, but
still soft, Fold one-third of omelet toward center. You can do this by raising pan
and giving a flick of the wrist. Turn out on plate, folding omelet into thirds
Serve with cheese and chopped onion for diner to sprinkle on omelet as he/she desires.
