DEEP FRIED CATFISH

Several catfish fillets (approx. eq. in size.) milk to cover
corn meal (1 1/2 C per 6 oz. fillet) salt and pepper to taste
Place at least 2 inches cooking oil in deep skillet or pan. Heat to 375 Deg. F. While oil heats, soak fillets in milk. Combine cornmeal, salt and pepper in paper bag. Drain fillets and shake in cornmeal. Shake off excess coating and place in fryer. Fry until golden all sides. Drain on paper towels. Fry in batches in order to maintain heat. Fillets can be spiced up with addition of cayenne or other hot spice to cornmeal mixture.
