| 1 C yellow mustard seed | 1 C brown mustard seed |
| 1 C dark beer | 1 1/4 C white wine vinegar |
| 1 C mustard powder | 1 tsp sugar |
| 1 tsp salt | 1/4 tsp ground mace |
| 1/4 tsp ground tumeric | 1 tsp ground allspice |
| Put mustard powder in bowl with1 C water. Let stand for 10 minutes.Place mustard seeds, beer and vinegar in a non-reactive container. Set aside for 48 hours, checking occasionally to make sure seeds remain covered with liquid. Add additional beer and vinegar in equal proportions, if necessary. Remove mixture to blender, or food proccesor. Add remaining ingredients and blend until mix becomes creamy (5 -6 minutes). |
