| 1/2 lb. diced ham | 3 cups chicken broth |
| 3 15 oz. cans black beans, drained | 2 tbsp vegetable oil |
| 1 carrot, chopped | 1 celery rib, chopped |
| 2 large onions, minced | 6 cloves minced garlic |
| 1 15 0z. can chopped tomato, drained | 1/4 tspchipotle in adobo |
| 1 tsp ground cumin | 1 tsp ground coriander |
| 1 tsp salt | 1/2 tsp ground thyme |
| 3 tbsp bottled lime juice | pepper to taste |
| Heat oil in heavy stock pan. Add onions, carrots, celery and garlic. Cook until soft, about 5 minutes. add beans and broth. bring to boil. Addseasonings and cook until beans become thickened. Add lime juice, tomato and Choptle adobo. Cook an addition 15 to 30 minutes. Test taste. Add chipotlt adobo as desired. |
