Beer Cheese Soup
| 1/4 lb. Bacon, diced | 1/2 C. chopped onion |
| 8 c. milk | 4 c. chicken broth |
| 2 tsp. Worcestershire Sauce | 1 tsp. hot pepper sauce |
| 1 1/3 c. corn starch | 16 oz. pasteurized cheese spread |
| 12 oz. can of beer | Minced fresh Parsley |
| Cook bacon in skillet until brown, but not crisp. Drain, reserving 1 tbsp. Drippings. Cook onion in reserve until tender. Drain. Pour 6 oz. milk into double boiler. Heat over simmering water until hot. Add broth, Worcestershire Sauce, pepper sauce, bacon and onions to milk. Stir remaining milk together with cornstarch. Blend into milk mixture. Cook and stir until mixture is smooth. Gradually add cheese and beer. Serve hot. Serves 4 (c)2000Recipes4U.com(tm) |
