| 1 lb. Catfish fillets | 2 tbsp. lemon juice | |
| 1/4 c. evaporated milk | 2/3 c. corn flakes | |
| Cooking oil. | ||
| Heat oven to 450°F. Sprinkle fillets with lemon juice, dip in milk and roll in corn flakes. Place fillets on greased baking pan. Drizzle with oil. Bake about 8 minutes, or until flesh flakes easily.
