CHOCOLATE CHIP MUFFINS
3/4 c. flour 1/2 tsp. baking powder
1/2 c. margarine 1/2 c. Sugar
1 oz. semi-sweet chocolate 1 egg
1 tbsp. Bourbon 1 tsp. vanilla
1/2 c. semi-sweet chocolate chips 1/2 c. chopped pecans
3 doz. pecan halves
Combine flour, baking soda and salt. Place margarine and sugar in large mixing bowl. Beat until fluffy. Beat in chocolate, egg, bourbon and vanilla. Add flour, baking soda and salt mixture. Stir until mixture ismoist throughout. Fold in chocolate chips and chopped pecans. Lightly grease miniature muffing tin. Spoon mixture into pans. Top with pecan halves. Place in oven preheated to 400°F and bake for 15 minutes. Check with toothpick for doneness. (When toothpick comes out clean muffins are done.) Cool in pan for 5 minutes then turn out onto cookie sheet. Makes 36 muffins
