14 oz black beans
1 cup sour cream
11 oz diced chili tomatoes
14 oz sweet corn
4 chicken breasts (shredded)
8 oz jasmine rice
1 tsp fresh cilantro
1/4 tsp cumin
1/2 tsp adobo seasoning
1 pinch paprika
14 oz taco seasoning
salt and pepper to taste
guacamole
shredded lettuce
2 cup shredded cheddar cheese
extra virgin olive oil
Cut up chicken and add cumin, taco seasoning salt, pepper, paprika, and Adob, set to the side;. Cook rice according to the directions on the box. In a large saute or frying pan on med-high heat,add 2 tablespoons Extra Virgin Olive Oil, and add chicken. While chicken is cooking, open cans of black beans, corn, diced tomatoes, guacamole and put in small bowls Warm the can of beans and corn. When done, serve chicken and toppings.
